Tia Rosa's Enchilada Lasagna

This is an absolute favorite - whether you make traditional enchiladas or as a lasagna!

INGREDIENTS:
1 pound lean ground beef, turkey or vegetarian crumbles
2 TBSP cilantro, chopped (optional)
2 cups shredded cheddar cheese
8 6-inch flour tortillas

PREPARATION:
Preheat oven to 325 degrees F and grease 9x13 baking dish with drizzle of Garlic GSO. Sauté ground meat of choice, Adobo and oil in a large skillet over medium high heat until thoroughly cooked. Transfer to a large bowl add 1/2 cup Enchilada sauce, 1 cup cheese and cilantro; toss to combine.

In baking dish layer: Tortillas, enchilada sauce, seasoned protein and cheese. Repeat process and end with a layer of sauce. Cover with tin foil. Bake in 325 degree oven for about 30 minutes or until heated and cheese is bubbly.

Serve enchiladas with sour cream, sliced avocado & tomatoes on the side along with a romaine salad with Cilantro Lime Vinaigrette.

A Special Request

Those of you who know me, know I have a true passion for all kinds of food! I am also incredibly proud and excited to be working for a company that equally shares my devotion to good, healthy, delicious food! I have had the honor of being on Wildtree's New Product Tasting Committee for the year and would love to continue to be a part of it. We get to taste-test all the products in development, help come up with recipes, name the products and offer suggestions for items we would like to see in the catalog. In order to be a invited to be a part of this committee you have to write a note explaining why it's important to us and take on some added responsibility as Wildtree counts on us to make sure their products really are simple, delicious and healthy. In order to be considered as a candidate for this committee for next year, I am in the middle on meeting my requirements during the months of April, May & June. I am asking all my family, friends and customers to please keep positive thoughts that I can do it, and to also help me out. If you know anyone who may be interested in hosting a tasting or trying our products, I would love to talk to them. In just a few weeks, our May products will be released and I cannot wait to share them with you! In the meantime, I am eagerly awaiting my shipment of fall samples to try and working hard to ensure there are lots of new products to make your life more simple and delicious!

Wicked Good Slow Cooker Sauce Recipe

These are Wicked Good Ribs and they are just as easy to cook as the chicken recipe below!

Wicked Good Slow Cooker Chicken
4 boneless skinless chicken breasts
1 cup Wildtree Wicked Good Slow Cooker Sauce
1 medium onion, thickly sliced
8 oz white button mushrooms, sliced
 
Put all ingredients in slow cooker. Cook on high 4 hours or on low for 8 hours. Serve over brown rice.

Where to begin when creating a healthier kitchen?

About a year ago, I wrote a step by step series in my newsletter for how to help you create a healthier pantry. Many of us are trying to eat healthier meals more often at home. Some of us even feel as if we are making great strides, but there is always something new to learn. Overhauling one’s cooking and eating habits can be a daunting task and Wildtree is here to help! Simple, healthy delicious meals can start right now! Here are two steps to begin with...keep checking back for more steps!

***STEP 1***
Change your cooking oil!

Many of us have been cooking with olive oil for years, not realizing that it is not the healthiest choice to use in cooking. (It is an extremely healthy oil when not heated very high.) Olive oil has more saturated fat than we should consume and a low flash point. That means that when you heat olive oil, it becomes a bad fat. Now is the time to make a change. Grapeseed oil has one of the lowest levels of saturated fats of all the oils, and no preservatives, sodium, trans fats, or cholesterol. In fact, grapeseed oil aids in reducing cholesterol levels. It has one of the highest flash points, maintaining its integrity when exposed to high heat. Whether you are using extra virgin olive oil, canola oil or some other vegetable oil, now is the time to switch to Wildtree’s expeller pressed Natural Grapeseed Oil. Expeller pressing is a chemical-free mechanical process that extracts oil from the grapeseed. Grapeseed oil expands when heated which means you will use less oil over time. 

Two scant TBSP of grapeseed oil equals ¼ cup of olive oil.

Lauren's Wildtree Turtle Bars

Lauren's Wildtree Turtle Bars

Ingredients:
Box of Wildtree's Not Your Everyday Poundcake mix
1/2 cup of caramel sauce (I use Stonewall Kitchen's Coffee Caramel)
2 sticks of softened butter (melt in microwave)
12 oz bag of semi sweet chocolate chips
1/3 cup evaporated milk
2 tsp almond extract

  Mix the dry pound cake mix with the melted butter and evaporated milk. Add almond extract. Spread half the dough in a greased 9x13 pan. Bake at 350 for 10-12 minutes. It will still be doughy. Drizzle with caramel sauce and sprinkle on the chips. Dot with the remaining dough using teaspoons. It will not cover completely. Bake 20 minutes (more or less depending on your oven--don't burn edges but make sure dough is cooked) Cool completely (it will solidify as it cools). Cut into small squares. Best if made a day ahead since it will be more solid. It's like eating a gooey chocolate chip cookie!
