Lunchbox Idea ~ Turkey Caesar Wrap

Turkey Caesar Wrap
Serves 4

1 pkg Wildtree Caesar Dressing mix, prepared
1 pound deli turkey or chicken
1 head Romaine lettuce, chopped
1 cup croutons
½ cup grated Parmesan cheese
4 flour tortillas, 8” each

In a medium-size bowl, toss lettuce with Caesar dressing, Parmesan cheese, and croutons till combined. Lay a tortilla on a flat surface. Top tortilla with about ¾ cup of salad mix. Lay 3 slices of turkey/chicken on top of salad. Fold right and left sides of tortilla toward the middle. Then fold bottom of tortilla towards top and over the filling, making sure to keep sides tucked in. Roll up. Cut wrap into two pieces. Repeat with remaining tortillas.

Simple Caesar Vinaigrette

Caesar Vinaigrette
Serves 8

1/3 cup vinegar (apple cider, red wine or balsamic)
3 tablespoons water
1 pkg.Wildtree Caesar Dressing Mix
2/3 cup Wildtree Natural Grapeseed Oil

In a small bowl, combine vinegar, water, dressing mix and oil. Whisk together until well blended. Allow dressing to sit 1 hour before serving to develop flavors. Refrigerate prepared dressing for up to 4 weeks.

Quick & Easy Caesar Dressing

Caesar Dressing
Serves 8

1 pkg.Wildtree Caesar Dressing Mix
½ cup mayonnaise
½ cup milk

Whisk all ingredients together in a small bowl. Let stand, covered, in the refrigerator for at least 30 minutes. Serve immediately or store in an air-tight container for 1 week.

Pancakes

Oliver's plate of chocolate chip pancakes!

Our family loves pancakes! With blueberries, chocolate chips, cinnamon, gingerbread...you name, we like it. Having to go gluten, dairy and egg free was a real bummer in terms of pancake making, but I have discovered ways to make them that are just as good.

Bob's Red Mill has a pretty good mix that is easy to make but we prefer the recipe from Babycakes newest cookbook.

Basic Pancakes

Ingredients
2 cups All Purpose Gf Flour (I use Bob's Red Mill)
2 tsp Baking Soda
2 tsp Baking Powder
1 tsp Ground Cinnamon
1 tsp Salt
1/2 tsp Xanthan Gum
2/3 cup Agave Nectar
2/3 cup Rice Milk
2/3 cup Unsweetened Apple Sauce
1/2 cup coconut or Wildtree's Butter Flavored Grapeseed Oil
2 TBSP Pure Vanilla Extract
1/2 cup blueberries or chocolate chips

Directions
In a medium bowl whisk the flour, baking soda, baking powder, cinnamon, salt and xanthan gum.  Add agave nectar, rice milk, apple sauce, coconut oil or grapeseed oil, and vanilla. Mix with rubber spatula until smooth. Stir in blueberries or chocolate chips.

Place griddle over medium heat. Add 1 tsp coconut or grapeseed oil to coat pan. Pour in 1/4 cup portions and cook until surface of pancake is dimpled with tiny holes, then flip. Cook other side for about 2 minutes more.

Transfer to a warm plate in oven. Repeat. Serve with sliced bananas and warm maple syrup.

Simple Chicken Stock

Homemade Chicken Stock
(from leftover rotisserie chicken)

Did you know that using homemade broth in recipes not only makes them taste better, it is also way more nutritious? Our grandmothers knew something...chicken soup really does make you feel better! And no, Campbell's and Progresso soups are not the same as they are loaded with sodium, preservatives, MSG and a lot of other things your body cannot recognize or digest.

What makes homemade bone broth & soups so nutritious?
Amino Acids (which helps the body detoxify) and lots and lots of minerals and trace minerals such as calcium, magnesium, phosphorus, silicon and sulphur. It also contains chondroitin sulphates and glucosamine (sold as supplements now for joint pain and arthritis!). Bone broths also contain gelatin. You know you've made a nutritious homemade broth when there is a congealed jelly on top when it is refrigerated - don't discard this! It's super good for you! Gelatin can help with many conditions such as Crohn's, diverticulitis, leaky gut and more. It helps the lining of the intestines which aids in digestion and the absorption of nutrients and strengthens your gut. Did you know that 60-70% of your immune system is based in your gut? That is why eating broth (Grammy's homemade chicken soup) helps strengthen your immune system.

Homemade Chicken Stock
1 4-5 lb. whole organic chicken (I roast mine, eat dinner, and use the leftover carcass.)
1 medium onion, quartered
3 stalks of celery, quartered (include greens)
4 medium carrots, washed but not peeled, cut in half
1 or 2 TBSP apple cider vinegar (helps leach nutrients from bones)
1 bay leaf
2 tsp sea salt
1/2 tsp freshly ground pepper
cold, filtered water (enough to fill crock pot)

Place everything in the crockpot, cover with water until about an inch or so below the rim. You don't want to overfill your crockpot or it will bubble over. It is better to add water as it cooks down - which is what I do. Let it simmer away on low for at least 24 hours.

Turn off the crockpot and let it cool. Carefully separate chicken from bones and store to use in soup or enchiladas. Discard all veggies and bones and strain remaining broth. Store the broth in the fridge for up to 5 days or freeze it for up to three month.
