Lemon Dill Zucchini Chips

 
Lemon Dill Zucchini Chips
1 large zucchini, or summer squash
1 tablespoon Wildtree Natural Grapeseed Oil
1 teaspoon Wildtree Dill Dip Blend
1 tablespoon lemon juice

Preheat oven to 275°F. Use a mandoline, food processor with blade attachment, or knife to slice the zucchini into 1/8 inch slices. Toss the slices with Grapeseed Oil, Dill Dip Blend, and lemon juice. Spread the slices out in a single layer on a greased baking sheet. Bake for 30 minutes, flip and continue baking for another 30 minutes or until zucchini starts to turn golden brown.

Creamy Chicken Piccata


A simple, delicious, meal that will brighten your taste buds on a cold winter's day!
 
Creamy Chicken Piccata
2 tablespoons lemon juice
1 tablespoons Wildtree Roasted Garlic Grapeseed Oil
¼ teaspoons Wildtree Rancher Steak Rub
1 ¼ teaspoon dried basil, divided
¼ teaspoon dried oregano
2 chicken breasts (about 8 ounces)
2 cups penne
½ cup Wildtree Perfect Piccata Sauce
¼ cup heavy cream
2 tablespoons capers
¼ cup grated Parmesan cheese

Whisk together the lemon juice, Grapeseed Oil, Rancher, ¼ teaspoon dried basil, and dried oregano. Add the chicken breast to a resealable bag; add the lemon juice mixture and close the bag. Use your hands to move the chicken around in the marinade. Marinate for 20 minutes. Preheat a medium nonstick skillet over medium high heat; spray with pan spray. Add the chicken and cook until cooked through. Meanwhile cook the pasta according to package directions. Once the chicken is cooked, transfer to a cutting board and tent with foil. Add the Piccata Sauce to the now empty skillet over medium heat. Add the cream, capers, and Parmesan; stir to combine. Add the cooked, drained pasta to the sauce. Toss to combine; cook until the sauce has thickened slightly and coats the pasta, about 5 minutes. Serve with chicken.

Fattoush

This is the perfect accompaniment to Chicken & Onion Stew. It is another delicious dish from one of my favorite restaurants, cookbooks and chefs...Amoul. It is healthful, delicious and simple.
This recipe is straight from Amoul's cookbook which is amazing!

Fattoush
Fattoush is traditionally made from all the vegetables in one's garden and topped with stale bread, fattoush is considered a peasant's salad. If you do not have one of the ingredients listed such as khobez or purslane - just skip it or add something else - you are not going to mess it up! The one ingredient I do recommend is the sumac as it does make a difference.
 
1 head of cos lettuce (Romaine), washed and dried
3 baby cucumbers, sliced in rounds (English or Persian would both work.)
5 ripe tomatoes, chopped (I used cherry)
1 bunch purslane, removed from stem and washed carefully (I omitted this.)
1 bunch flat leaf parsley, washed and chopped
leaves of 2 sprigs of mint, washed and chopped
1 bunch spring onions, washed and cut into thin rounds
2 TBSP sumac (I used a little over 1)
juice of 2 lemons (I used 1.5) 1/4 cup extra virgin olive oil
salt & pepper to taste
2 loaves of khobez or Lebanese bread, cut into bite-size pieces (I skipped this part to keep it gluten free.)

Preheat oven to 400 degrees F. Place khobez on a tray and toast in the oven until crisp and golden, approximately 8-10 minutes. Put the bread in a bowl, drizzle with olive oil and toss gently. Cut lettuce into bite-size pieces. Sprinkle the onions with sumac and rub together gently with your hands so that the sumac coats the onions evenly. Place all the vegetables in a large bowl. Add lemon juice, olive oil, salt and pepper, and toss thoroughly. Add the purslane and toss gently, as the purslane is quite fragile and bruises easily. Add the bread crisps, and toss again. Serves 6 - 8 people.

Where to begin when creating a healthier kitchen?

About a year ago, I wrote a step by step series in my newsletter for how to help you create a healthier pantry. Many of us are trying to eat healthier meals more often at home. Some of us even feel as if we are making great strides, but there is always something new to learn. Overhauling one’s cooking and eating habits can be a daunting task and Wildtree is here to help! Change your cooking oil!

Many of us have been cooking with olive oil for years, not realizing that it is not the healthiest choice to use in cooking. (It is an extremely healthy oil when not heated very high.) Olive oil has more saturated fat than we should consume and a low flash point. That means that when you heat olive oil, it becomes a bad fat. Now is the time to make a change. Grapeseed oil has one of the lowest levels of saturated fats of all the oils, and no preservatives, sodium, trans fats, or cholesterol. In fact, grapeseed oil aids in reducing cholesterol levels. It has one of the highest flash points, maintaining its integrity when exposed to high heat. Whether you are using extra virgin olive oil, canola oil or some other vegetable oil, now is the time to switch to Wildtree’s expeller pressed Natural Grapeseed Oil. Expeller pressing is a chemical-free mechanical process that extracts oil from the grapeseed. Grapeseed oil expands when heated which means you will use less oil over time.
